<p>Want to indulge in a meaty Jewish staple, but, well, without the meat? Have a vegetarian or vegan friend coming to your Rosh HaShanah meal? Fear not! You can have this tasty brisket-substitute with no animal products.</p>
<p>This recipe is adopted from the <a href="http://www.meettheshannons.net/2011/04/pesach-sameach-lets-celebrate-with.html" target="_blank"><em>Meet the Shannons</em></a> food blog.</p>
<p><strong>You will need:</strong></p>
<p>3 Small Leeks, sliced<br />
6-8 Red Potatoes, quartered<br />
1 Cup Baby Carrots<br />
2 Packages Gardein Beef-less Tips (defrosted)<br />
1/4 Cup Olive Oil, plus an extra 2 tablespoons to brush over your &#8220;beef&#8221;<br />
1/4 Cup Kosher Red Wine (Manischewitz or similar)<br />
1/4 Cup Soy Sauce<br />
1 Can Tomato Paste (6oz)<br />
1/2 Cup Strong Brewed Black Coffee<br />
3 Tablespoons Light Brown Sugar<br />
2 Tablespoons Vegan Worcestershire Sauce (optional)<br />
Kosher Salt and Black Pepper (to taste)</p>
<p><strong>Directions:</strong></p>
<ol>
<li>In your slow cooker, mix leeks, potatoes, carrots, 1/4 cup olive oil, red wine, and soy sauce and cook on high for 2 hours.</li>
<li>In a small bowl, mix coffee, tomato paste, Worcestershire sauce, and brown sugar with a whisk until sugar has dissolved.</li>
<li>Brush the defrosted gardein with 2 Tablespoons of olive oil. Put the gardein in your slow cooker on top of the vegetables (don&#8217;t mix them in).</li>
<li>Pour the coffee sauce over the top and cook for another hour.</li>
<li>Pre-heat oven to 400.</li>
<li>With a ladle, move your gardein and vegetables from your slow cooker into a glass baking dish. Bake for 30 to 40 minutes or until the top begins to brown. Turn your oven down to 200 and cook for another 20 to 30 minutes.</li>
<li>Remove from the oven once your sauce has reduced to saucy gravy. Let cool for 5 minutes before serving.</li>
</ol>

<p>Having a traditional, sweet dessert on Rosh Hashanah is almost a bit passé: you need a little something extra for it to be amazing. Maybe I’m just getting older, but I’ve come to realize that apple dipped in honey isn’t quite hitting the spot, and neither is your run-of-the-mill honey cake or apple pie. Life is a bit too complicated for things to just be &#8220;sweet,&#8221; and I think the finale of the Rosh Hashanah meal should reflect that.</p>
<p>Instead of creating a twist on an old-fashioned classic, I decided to do something a little more modern: a Salted-Caramel Apple Galette. With a light flaky crust, slices of baked apple, and a salty caramel drizzle, this is one delicious—and complex—dessert. A good amount of sweet and a tasteful amount of salt brings all the ingredients together and elevates the flavors to something better than just sweet.</p>
<p><em>Ingredients</em></p>
<p><strong>The Crust</strong></p>
<p>1¼ cups all purpose flour<br />
½ tsp sea salt<br />
Pinch of pepper<br />
½ cup unsalted margarine (cut into cubes)<br />
¼ cup non-dairy creamer<br />
1 tsp lemon juice<br />
1 tsp vinegar<br />
¼ cup cold water</p>
<p>6 red apples (peeled, cored, and sliced thinly)</p>
<p><strong>Salted Caramel Drizzle</strong></p>
<p>⅓ cup sugar<br />
2½ tbsp unsalted margarine (cut into small pieces)<br />
½ tsp coarse sea salt<br />
2½ tbsp non-dairy creamer</p>
<p><em>Directions</em></p>
<p>​Start by making the crust. Combine the flour, salt, and pepper in your food processor with the dough blade in it. Turn the food processor on, and gradually add the margarine, mixing between additions. In the end you should have crumbs of dough with a mealy consistency.</p>
<p>In a small bowl combine all the liquids for the crust. Turn the food processor on and gradually pour in the liquids until the dough is a very sticky&nbsp; solid.</p>
<p>Oil the sides of a large bowl and place the dough inside. Cover the bowl with cling wrap and let the dough rise for 1 1/2 hours.</p>
<p>While you wait for the dough to rise, start making your salted caramel drizzle.</p>
<p>Place a medium pan over a medium high heat. Place the sugar in the pan, allowing it to melt and brown. After about 5 minutes the sugar should turn a deep copper color. Remove the pan from the heat and add the sea salt and margarine, stirring constantly until it is completely incorporated. Gradually add the non-dairy creamer to the pan, stirring consistently. Don’t be startled if the pan sizzles. You should end up with a solid, bronze-colored sauce. Pour the sauce in a glass bowl and set aside for later use.</p>
<p>When your dough is almost done rising, peel and cut your apples. Place them on a large plate or cutting board so that you will have easy access to them when laying out the dough.</p>
<p>Once the dough has risen, place it on a flat and floured surface and roll out until you have a circle about a foot in diameter. Place the apple slices in an overlapping circular pattern across the center of the galette, leaving about 4 inches of dough around the edges. Once the apples are in place, preheat the oven to 400 degrees and fold the “apple-less” edge over the apples, <a href="http://halfsqueezedlemon.files.wordpress.com/2011/10/galette-fold-dough-over.jpg" class="mfp-image" target="_blank" rel="noopener">pleating the pastry together</a>&nbsp;as you go.</p>
<p>Place the galette on a flat baking sheet and bake for about 40 minutes or until the dough is golden brown and flaky.</p>
<p>Take the galette out of the oven and set aside. Heat the salted caramel sauce again so that it will be easier to spread. Once warm, drizzle it in a pattern across the galette. Serve while hot.</p>

<p>For many families, eating honey cake is a Rosh Hashanah staple, but in my family it wasn’t eaten so much as ignored. I never cared for this particular baked good. I find it heavy and cloyingly sweet. It was a cake I associated with grandparents and shul kiddush leftovers—always left untouched as the crowd thinned and people headed home for lunch. But wherever I went on Rosh Hashanah, people would insist on making and serving this cake because its star ingredient, its namesake, is practically the symbol for Rosh Hashanah. After all, how can you say “<em>l’shana tovah u mitukah</em>”—“to a good and sweet new year”—without honey? </p>
<p>The honey cake originated in Germany around 1320 and was called <a href="http://en.wikipedia.org/wiki/Lekach">lekach</a>, coming from the German word for “lick.” Honey was often used as a treat to encourage and entice young yeshiva students in their studies. Early Ashkenazi Jews even made a ceremony out of it with the <a href="http://forward.com/articles/130912/deconstructing-honey-cake/">Aleph-Bazyn</a>: honey was spread on slates containing the Hebrew alphabet and as the young students licked off the honey, the idea was that they were reminded of the sweetness the Torah held. At the end of the ceremony, honey cakes along with other sweets were distributed.</p>
<p>Before the days of refrigeration and plastic cake-savers, honey was also an extremely popular ingredient in cooking and baking because it acted as a preservative and was supposed to ensure a moist cake. Unfortunately, this aspect of the cake—the densely sweet cake that seems to last forever—is not so enticing. To compensate for that, I’ve come up with a version that lightens things up by incorporating the traditional flavor of the honey cake into a <a href="http://en.wikipedia.org/wiki/Chiffon_cake">chiffon cake</a>, which is leavened by both chemical leaveners and beaten egg whites. The result is a moist, yet light, cake.</p>
<p>To heighten the taste, I paired the cake with a pomegranate glaze, which offers a tangy and fruity counterpoint to the sweetness. Pomegranates are also a traditional Rosh Hashana food because their many seeds are said to number 613, the same as the number of mitzvot found in the Torah. Many people eat them in order to usher in a year filled with good deeds—I eat them because of their deliciously tart seeds that burst with flavor. Sprinkling fresh seeds on top of the glazed cake adds a wonderful texture as well as flavor to the cake.</p>
<p>Unlike its earlier iterations, this honey cake—with its light texture, ruby red glaze, and crunchy pomegranate topping—shouldn’t be ignored. If nothing else, it will help usher in a year filled with scrumptious cakes and tastier shul kiddushes. </p>
<p><strong>Not Your Bubbe’s Honey Cake</strong><br />
8-10 Servings</p>
<p><em>Ingredients:</em></p>
<p>Cake:<br />
1 cup all purpose flour<br />
1 tsp baking powder<br />
1/2 tsp baking soda<br />
pinch of salt<br />
5 eggs, separated<br />
1/2 cup honey<br />
1/4 cup dark brown sugar<br />
1/4 cup white sugar<br />
1/2 cup vegetable oil<br />
3 tbsp honey-flavored tea (honey chamomile, or honey lemon are also fine), cooled<br />
Zest of half a lemon</p>
<p>Glaze:<br />
2 cups unsweetened pomegranate juice<br />
1/4 cup sugar<br />
2 tbsp orange juice<br />
3 tsp corn starch<br />
Pomegranate seeds for decoration</p>
<p><em>Special Equipment:</em> </p>
<p>9-inch tube pan or Bundt pan</p>
<p><em>Directions:</em></p>
<p>1. Pre-heat the oven to 350 degrees and grease the pan well.</p>
<p>2. To make the cake, combine the flour, baking powder, baking soda, and salt.</p>
<p>3. In a separate bowl, combine the egg yolks and both sugars, mixing well.  </p>
<p>4. Add the oil, honey, tea, and lemon zest to the egg yolk mixture.  </p>
<p>5. Combine the honey mixture with the flour mixture and set aside.</p>
<p>6. In another bowl, beat the egg whites until they form stiff peaks, being careful not to over beat them.  </p>
<p>7. Add 1/3 of the whites into the flour and honey mixture and combine.  Add the next third in carefully, folding the whites in until nearly combined.  Add the last 1/3 of the whites, gently folding, being careful not to deflate them.</p>
<p>8. Pour into the prepared pan and put directly into the oven and bake for 40-45 minutes, or until the cake springs back when you touch it.</p>
<p>9. Let cool for 10 minutes, then invert the pan onto a cooling rack and let the cake finish cooling off inverted in the pan. When completely cool, carefully lift the pan to unmold. If you have any difficulty, run a thin knife around the edges of the pan to help the cake out.</p>
<p>10. While the cake is in the oven, make the Pomegranate Glaze. To make the syrup, combine the pomegranate juice sugar, orange juice, and cornstarch in a sauce pot.  </p>
<p>11. Bring to a boil then reduce the heat and allow the mixture to simmer. Cook the mixture for about 20 minutes, until it thickens and reduces by half. If necessary, strain the mixture and then allow it to cool.</p>
<p>12. When both the cake and glaze are cool, pour the glaze over the cake and then sprinkle the fresh pomegranate seeds on top.</p>

<p>Filling:<br />
&#8211; However many apples you have in the fridge<br />
&#8211; Sugar<br />
&#8211; 1 Lemon<br />
&#8211; Cinnamon, Nutmeg, etc.<br />
&#8211; Vanilla extract<br />
OPTIONAL: Any other fruit you might have can work too&#8211;raspberries, plums, peaches, etc.</p>
<p>Topping:<br />
&#8211; Do you have Quaker Oats?  Not fancy oats.  Just regular Quaker Oats.<br />
&#8211; Some sort of chopped nut<br />
&#8211; Any bits of cereal that are left at the bottom of the bag that might be too small a portion for a full bowl of cereal<br />
&#8211; Butter/Margarine<br />
&#8211; Stevia packets<br />
&#8211; Cinnamon/Nutmeg<br />
&#8211; Salt</p>
<p>Step 1: Cut up all your apples into manageable slices and squeeze the lemon over them so they don&#8217;t turn brown.<br />
Step 2: Add a healthy pour of sugar to the bowl of apples, then follow with generous shakes of cinnamon and nutmeg and a splash of vanilla.<br />
Step 3: Mix it all together with your hands and let sit.<br />
Step 4: Time to make your topping! In another bowl, combine big handfuls of oats, chopped nuts, and cereal.<br />
Step 4: Add 2 packets Stevia, a dash of salt, and some healthy shakes of cinnamon and nutmeg.<br />
Step 5: Add a hunk of butter (half or quarter of a stick at least) and squish everything together with your hands.<br />
Step 6: Pre-heat oven to 350<br />
Step 7: Pour apple filling into greased casserole dish or similar piece of oven-safe cookware.<br />
Step 8: Crumble (cover) the apples with your topping until you can&#8217;t see most of the apples.  Try and apply evenly.</p>
<p>Bake until top is golden brown and the filling is bubbly, about 45 minutes.</p>
<p>Top with honey, vanilla ice cream/soy cream/lite cool whip &amp; enjoy.</p>
